Raw Vegan Peanut Butter Cacao Cookies
Hi Everyone!!! Hope your holidays were lovely. Ours were pretty fantastic. Lots of laying around in our pj's, drinking apple cider and pretty much doing nothing. I even made these fantastic Raw Vegan Peanut Butter Cacao Cookies. They have been a family favorite for as long as I can remember. One of my greatest memories from my grandmother, Maudie Peters. Maudie....what an incredible name! I miss her so much. She is the greatest. She raised all her siblings from the time she was 11 years old because her mother died. Then she went on to raise 6 of her own. Talk about a great lady. I love ya Grandma! Hope she doesn't mind me vegan-ing these up, and I hope you like them too.Raw Vegan Peanut Butter Cacao Cookies
1/2 cup of Agave
1/4 cup-1/2 cup coconut milk (follow the link for my recipe or you can use store bought. You could also sub any other milk that you like.)
1/2 cup coconut butter
1 tsp vanilla
2 tbsp of cacao (or carob)
Place all wet ingredients in a bowl and stir till smooth. (remember to warm up your coconut butter before hand by placing jar in a bowl of hot water). Next add cacao and stir till incorporated.
Stir in:
1/2 cup of peanut butter
and
2 cups old fashioned oats
When fully combined drop spoonfuls of cookie batter onto either wax paper or dehydrator sheets.
Wax paper method:
Place wax paper on counter top and drop spoonfuls of cookies untill they firm up. Then transfer them to a container and store in fridge. If it is really warm in your home, they may need to just go straight to the fridge/freezer.
Dehydrator method:
Place cookies in dehydrator on teflex sheets and heat at 140 for an hour. Take them out, let them cool a bit and then place on cookie sheets and leave in freezer for approximately 5-10 minutes. Store in containers in the fridge.

New Etsy Shop!!! Vegan Jewelry!!!
Hi everyone! Shelly here. I know, I know, I've been a huge slacker lately. I'm not sure what the heck is going on, but I just have not been focused on food lately. I wanted to do something creative. I know food is creative, but I wanted to make something with my hands. I've been seeing alot of handstamped jewelry lately and thought, "I can do that!" So, I did!
Hope you like what you see. I'm going to get my butt in gear this week and film a yummy cookie recipe for you all. One of my Grandma's that I converted to raw. It's soooo good! Be on the look out for that. In the meantime, check out the Etsy store.
Love you all~~~~
Shelly:)
